Ingredients

  • 1 cup sugar
  • 1 container Cool Whip (or heavy cream)
  • 1 cup crushed pineapple (canned)
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Rinse and sort fresh cranberries, discarding any that are bruised or shriveled.
  2. Combine cranberries and sugar in a saucepan. Cook until the cranberries burst and release their juices, then let cool.
  3. Fold together the chilled Cool Whip and crushed pineapple in a large bowl.
  4. Incorporate the cooled cranberry mixture, mixing until well combined.
  5. Add mini marshmallows and nuts if desired, folding carefully to maintain fluffiness.
  6. Transfer the dessert into a serving bowl and chill in the refrigerator for at least two hours.
  7. Serve with a dollop of extra whipped cream on top if desired.
