Ingredients

  • ½ cup granulated sugar
  • 3 large eggs
  • 2 lemons (zest and juice)
  • 1 cup granulated sugar
  • 1 ½ cups fresh or frozen cranberries
  • ¼ cup all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 ¾ cups flour, ½ cup sugar, and ½ cup butter in a mixing bowl until crumbly. Press into a greased 9×9-inch baking dish.
  3. Bake for about 15 minutes, until lightly golden.
  4. Whisk together ¼ cup flour, 1 cup sugar, 3 eggs, zest of 2 lemons, and ½ cup lemon juice in another bowl. Stir in cranberries.
  5. Pour the filling over the cooled crust and smooth it out evenly.
  6. Return to the oven and bake for 20-25 minutes, until set and lightly golden.
  7. Cool completely at room temperature, then chill before slicing into bars. Dust with powdered sugar before serving.
