A delightful roast beef dish glazed with sweet-tart cranberry sauce, perfect for family gatherings.


Ingredients

  • 1 Beef roast (ribeye or sirloin recommended)
  • 1 cup Cranberry sauce (store-bought or homemade)
  • 2 tablespoons Fresh thyme
  • 2 tablespoons Fresh rosemary
  • 4 cloves Garlic, minced
  • 1 Yellow onion, diced
  • 1 cup Beef broth
  • Salt and pepper to taste
  • 1 tablespoon Olive oil

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper on all sides and rub minced garlic onto the surface.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the beef roast for 3-4 minutes on each side until browned.
  5. Remove the roast from the skillet and set it aside.
  6. Sauté diced onion in the same skillet until translucent.
  7. Stir in cranberry sauce and beef broth, bringing it to a simmer.
  8. Add the roast back into the skillet, spooning sauce over it.
  9. Tuck fresh herbs around the roast and place the skillet in the oven.
  10. Roast for 60-90 minutes or until the desired doneness is reached.
  11. Rest the roast for 15-20 minutes covered with foil.
  12. Slice against the grain and serve with the sauce and garnishes.

Notes

For variations, consider using pork or chicken instead of beef, and try a fruit chutney if you want a different twist.
