- 1 Beef roast (ribeye or sirloin recommended)
- 1 cup Cranberry sauce (store-bought or homemade)
- 2 tablespoons Fresh thyme
- 2 tablespoons Fresh rosemary
- 4 cloves Garlic, minced
- 1 Yellow onion, diced
- 1 cup Beef broth
- Salt and pepper to taste
- 1 tablespoon Olive oil
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast with salt and pepper on all sides and rub minced garlic onto the surface.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the beef roast for 3-4 minutes on each side until browned.
- Remove the roast from the skillet and set it aside.
- Sauté diced onion in the same skillet until translucent.
- Stir in cranberry sauce and beef broth, bringing it to a simmer.
- Add the roast back into the skillet, spooning sauce over it.
- Tuck fresh herbs around the roast and place the skillet in the oven.
- Roast for 60-90 minutes or until the desired doneness is reached.
- Rest the roast for 15-20 minutes covered with foil.
- Slice against the grain and serve with the sauce and garnishes.
Notes
For variations, consider using pork or chicken instead of beef, and try a fruit chutney if you want a different twist.
