  • 2 tbsp Olive Oil or Butter
  • Salt, to taste
  • Black Pepper, to taste
  • ½ tsp Nutmeg
  • ½ tsp Cayenne Pepper (optional)

Instructions

  1. Prep your ingredients: Start by peeling and dicing the butternut squash, onion, and garlic. The smaller the pieces, the faster they will cook.
  2. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until translucent. Stir in the garlic and cook for an additional minute until fragrant.
  3. Cook the squash: Add the diced butternut squash to the pot along with salt, pepper, and nutmeg. Stir well to coat the squash. Continue cooking for about 5 minutes.
  4. Simmer: Pour in your broth, ensuring the squash is submerged. Bring to a gentle boil, then lower the heat and let it simmer for 20–25 minutes, or until the squash is tender and easily pierced with a fork.
  5. Blend until smooth: Remove the pot from the heat and let it cool slightly. Use an immersion blender to puree the soup until it’s silky smooth. For a creamier texture, stir in coconut milk or heavy cream at this point.
  6. Adjust seasoning: Taste and adjust the seasoning, adding more salt, pepper, or spices according to your preference.
  7. Serve and enjoy: Ladle the soup into bowls, and if you fancy, garnish it with a swirl of cream, a sprinkle of fresh herbs, or roasted seeds for a little crunch.

Notes
