- 2 boneless chicken breasts or thighs, diced
- 1 can (400ml) coconut milk
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 2 carrots, sliced
- 1 bell pepper, sliced
- 1 cup fresh cilantro, chopped
- Juice of 2 limes
- 1–2 fresh chili peppers or chili paste, to taste
- 1 tablespoon cooking oil
Instructions
- In a large skillet or pot, heat the oil over medium heat and sauté the garlic, ginger, and onions until fragrant and translucent, about 3 minutes.
- Add the diced chicken and cook until no longer pink, about 5-7 minutes.
- Incorporate the sliced carrots and bell peppers and sauté for another 3-4 minutes.
- Pour in the broth and stir in the coconut milk, bringing the mixture to a gentle simmer for about 10 minutes.
- Adjust the flavor with lime juice, salt, pepper, and chili to taste.
- Finish with freshly chopped cilantro and additional lime juice before serving hot.
Notes
Feel free to adjust spice levels and incorporate other vegetables based on availability. This soup can be made vegetarian by substituting chicken with tofu or shrimp.
