  • ¼ cup dry sherry
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Begin by melting the butter in a large pot over medium heat.
  2. Add the chopped shallot and minced garlic; sauté until fragrant.
  3. Pour in the seafood stock and bring to a gentle simmer.
  4. Add the shrimp and crabmeat; allow everything to cook for about 5 minutes.
  5. Stir in the heavy cream and sherry; let it simmer for an additional 10 minutes.
  6. Season with salt, pepper, and thyme; remove from heat.
  7. Blend the bisque using an immersion blender until smooth.
  8. Garnish with chopped parsley before serving.
