- 1 pound crabmeat (lump or claw)
- 1 pound shrimp (peeled and deveined)
- 3 tablespoons unsalted butter
- 1 finely chopped shallot
- 2 cloves garlic (minced)
- 1 cup seafood or fish stock
- 1 cup heavy cream
- ¼ cup dry sherry
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Begin by melting the butter in a large pot over medium heat.
- Add the chopped shallot and minced garlic; sauté until fragrant.
- Pour in the seafood stock and bring to a gentle simmer.
- Add the shrimp and crabmeat; allow everything to cook for about 5 minutes.
- Stir in the heavy cream and sherry; let it simmer for an additional 10 minutes.
- Season with salt, pepper, and thyme; remove from heat.
- Blend the bisque using an immersion blender until smooth.
- Garnish with chopped parsley before serving.
