- 4 large russet or Yukon Gold potatoes, peeled and diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh herbs (thyme or chives) for garnish
- Smoked paprika (optional)
Instructions
- Prep your ingredients by peeling and dicing your potatoes, dicing the onions, and mincing the garlic.
- Sauté the onions and garlic in a skillet over medium heat until translucent.
- Combine the sautéed mixture with the diced potatoes, broth, and seasonings in the crock pot.
- Cook on low for about 6-8 hours or high for 3-4 hours.
- Blend the soup using an immersion blender to your desired consistency.
- Finish by stirring in cream cheese and shredded cheddar until melted and well combined.
Notes
For a vegetarian version, use vegetable broth and add sautéed mushrooms or greens for more texture.
