Ingredients

  • 8 oz fettuccine or linguine
  • 1 cup full-fat Greek yogurt
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 8 oz cremini or shiitake mushrooms, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of 1 lemon
  • Salt and freshly cracked pepper to taste

Instructions

  1. Cook the pasta: Boil a large pot of salted water. Add pasta and cook until al dente, reserving 1 cup of pasta water before draining.
  2. Sauté the garlic and mushrooms: In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Toss in mushrooms and cook until golden brown.
  3. Make the sauce: Lower heat and add Greek yogurt, stirring until combined. Gradually add reserved pasta water until creamy.
  4. Mix in the pasta: Add drained pasta to the skillet, tossing until well coated. Add more pasta water if needed.
  5. Add fresh herbs and lemon juice: Stir in chopped basil and parsley, and squeeze in lemon juice. Season with salt and pepper.
  6. Serve and garnish: Serve immediately, garnished with additional herbs and Parmesan if desired.
