Ingredients

- 1 cup orzo
- 8 oz cremini or shiitake mushrooms, sliced
- 2 tablespoons butter (or olive oil)
- 2 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth)
- 1 cup heavy cream (or plant-based cream)
- 1/2 cup grated parmesan cheese (optional)
- Fresh parsley or thyme, for garnish
- Salt and pepper to taste
Instructions
- Sauté the mushrooms in butter over medium heat until golden brown, about 5-7 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in the uncooked orzo, then pour in the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer until orzo is al dente, about 10-12 minutes.
- Reduce heat to low, stir in heavy cream and parmesan until creamy. Adjust thickness with more broth if needed.
- Stir in fresh herbs and season with salt and pepper.
- Serve with an extra sprinkle of cheese and herbs.
