Ingredients

  • 1/2 cup grated parmesan cheese (optional)

Instructions

  1. Sauté the mushrooms in butter over medium heat until golden brown, about 5-7 minutes.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in the uncooked orzo, then pour in the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer until orzo is al dente, about 10-12 minutes.
  4. Reduce heat to low, stir in heavy cream and parmesan until creamy. Adjust thickness with more broth if needed.
  5. Stir in fresh herbs and season with salt and pepper.
