- 1 cup Orzo Pasta
- 8 oz Cremini or Button Mushrooms, sliced
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 1 cup Heavy Cream or Half-and-Half
- 2 cups Vegetable Broth
- 2 tbsp Fresh Thyme or Parsley, chopped
- 1/2 cup Parmesan Cheese, grated
- Olive Oil, for sautéing
- Salt and Pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and sauté for an additional 1-2 minutes.
- Add sliced mushrooms, cooking until golden brown and moisture is released, about 5-7 minutes.
- Stir in orzo and toast slightly in the pan for 1-2 minutes.
- Pour in vegetable broth, ensuring orzo is submerged. Bring to a boil, then reduce to a simmer and cook for 8-10 minutes until orzo is al dente.
- Lower the heat and stir in cream and grated Parmesan until combined and creamy.
- Turn off the heat and fold in fresh herbs, adjusting seasoning with salt and pepper.
- Serve warm, garnished with additional Parmesan cheese and herbs.
Notes
Feel free to swap orzo for rice or quinoa, and use any mushrooms you like. This dish pairs well with a light white wine.
