  • 2 tbsp Fresh Thyme or Parsley, chopped
  • 1/2 cup Parmesan Cheese, grated
  • Olive Oil, for sautéing

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and sauté for an additional 1-2 minutes.
  2. Add sliced mushrooms, cooking until golden brown and moisture is released, about 5-7 minutes.
  3. Stir in orzo and toast slightly in the pan for 1-2 minutes.
  4. Pour in vegetable broth, ensuring orzo is submerged. Bring to a boil, then reduce to a simmer and cook for 8-10 minutes until orzo is al dente.
  5. Lower the heat and stir in cream and grated Parmesan until combined and creamy.
  6. Turn off the heat and fold in fresh herbs, adjusting seasoning with salt and pepper.
  7. Serve warm, garnished with additional Parmesan cheese and herbs.

Notes
