A comforting dish that combines the creamy texture of orzo with the vibrant flavors of fresh spinach and rich Parmesan, perfect for family gatherings.

Ingredients

Scale
  • 1 cup orzo
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

  2. Add orzo to the skillet and stir for about 1 minute to toast it slightly.
  3. Pour in vegetable broth and bring to a simmer, cooking for 10-12 minutes or until orzo is al dente.
  4. Stir in fresh spinach until fully wilted.
  5. Reduce the heat and add heavy cream and Parmesan cheese, mixing until the cheese melts and sauce is creamy.
  6. Season with salt and pepper, garnish with extra Parmesan and fresh herbs, then serve warm.

Notes

Feel free to customize with seasonal vegetables or a squeeze of lemon for brightness.
