Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 2 potatoes, diced
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Fresh thyme, to taste
  • Salt and pepper, to taste
  • Optional: cooked pasta or rice

Instructions

  1. Sauté the aromatics: Start by heating olive oil in a large pot over medium heat. Add diced onions and minced garlic, cooking until soft and fragrant, about 3-5 minutes.
  2. Add the vegetables: Toss in chopped carrots, bell peppers, and diced potatoes. Sauté for another 5-7 minutes.
  3. Pour in the broth: Add the vegetable broth to cover the veggies about an inch above and bring to a boil. Reduce to simmer and cook until the vegetables are tender, roughly 15-20 minutes.
  4. Blend it smooth: Use an immersion blender to purée the soup directly in the pot. If preferred, blend only half and leave some texture.
  5. Stir in cream: Mix in your heavy cream or coconut milk and stir until combined. Add fresh herbs, salt, and pepper to taste. Let it simmer for an additional 5 minutes.
  6. Serve and garnish: Ladle into bowls and garnish with fresh herbs, a drizzle of olive oil, or croutons.

Notes

For a dairy-free option, use coconut milk. Use frozen vegetables if fresh ones aren’t available.
