- 1 cup panko breadcrumbs
- 1/2 cup flour
- 1 egg (or flax egg for vegan)
- 1/4 cup mayonnaise
- 2 tbsp sriracha
- 1 tbsp honey
- 1 tbsp lime juice
- 1 cup rice or quinoa
- Fresh veggies (cucumbers, carrots, bell peppers)
- Fresh cilantro and green onions
Instructions
- Prepare the salmon: Start by cutting your salmon fillet into bite-sized cubes. Season lightly with salt and pepper.
- Create the breading: Set up a dredging station with three bowls—one for flour, another for egg, and the last for panko breadcrumbs mixed with garlic powder.
- Coat the salmon: Dip each salmon piece into flour, then egg, and finally coat with panko breadcrumbs.
- Fry the salmon bites: Heat oil in a skillet over medium heat. Fry salmon bites until golden brown—about 3-4 minutes on each side.
- Prepare the bang bang sauce: Mix mayonnaise, sriracha, honey, and lime juice in a bowl.
- Assemble the bowls: Place a scoop of rice or quinoa in each bowl, top with crispy salmon bites, drizzle with bang bang sauce, and add fresh veggies and herbs.
- Serve warm. Enjoy!
