Crispy Bang Bang Salmon Bites Bowls

Description

Delightful bowls featuring crispy salmon bites served with a sweet and spicy Bang Bang sauce, rice or quinoa, and vibrant vegetables.


Ingredients

  • 1 lb salmon fillets, skinless
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • Vegetables (bell peppers, carrots, snap peas)
  • 2 cups cooked rice or quinoa
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Cook rice or quinoa according to package instructions and set aside.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce. Set aside.
  3. Cut salmon into bite-sized pieces.
  4. In one bowl, place seasoned flour. In another bowl, beat the eggs. In a third bowl, pour panko breadcrumbs.
  5. Coat each salmon piece in flour, then dip in egg, and finally coat in panko breadcrumbs.
  6. Heat oil in a skillet over medium heat and cook salmon bites for 3-4 minutes on each side until golden brown and crispy.
  7. In each bowl, layer rice or quinoa, add salmon, veggies, and drizzle with Bang Bang sauce. Garnish with green onions and sesame seeds.
  8. Serve hot and enjoy!

Notes

For extra crunch, make sure not to overcrowd the skillet when cooking the salmon. Adjust spice levels in the sauce as desired.
