Delightful bowls featuring crispy salmon bites served with a sweet and spicy Bang Bang sauce, rice or quinoa, and vibrant vegetables.

- 1 lb salmon fillets, skinless
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- Vegetables (bell peppers, carrots, snap peas)
- 2 cups cooked rice or quinoa
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Cook rice or quinoa according to package instructions and set aside.
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce. Set aside.
- Cut salmon into bite-sized pieces.
- In one bowl, place seasoned flour. In another bowl, beat the eggs. In a third bowl, pour panko breadcrumbs.
- Coat each salmon piece in flour, then dip in egg, and finally coat in panko breadcrumbs.
- Heat oil in a skillet over medium heat and cook salmon bites for 3-4 minutes on each side until golden brown and crispy.
- In each bowl, layer rice or quinoa, add salmon, veggies, and drizzle with Bang Bang sauce. Garnish with green onions and sesame seeds.
- Serve hot and enjoy!
Notes
For extra crunch, make sure not to overcrowd the skillet when cooking the salmon. Adjust spice levels in the sauce as desired.
