- 1 cup stone-ground grits
- 4 cups water or stock
- 2 tablespoons butter
- 1 cup sharp cheddar or pepper jack cheese
- 1 tablespoon Cajun seasoning
- 1 pound medium to large shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt, to taste
- Fresh parsley or green onions, for garnish
- Squeeze of lemon juice, for brightness
Instructions
- Prepare the Grits: Bring 4 cups of water or stock to a boil in a large saucepan. Add salt to taste. Slowly whisk in 1 cup of grits, stirring continuously to prevent lumps. Reduce the heat to low and cover, cooking for about 20-25 minutes, or until the grits are tender and creamy. Stir occasionally, adding more water if necessary. Once done, stir in 2 tablespoons of butter and 1 cup of cheese until melted and incorporated.
- Cook the Shrimp: In a bowl, toss the shrimp with a tablespoon of cajun seasoning and a pinch of salt for flavor. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the shrimp in a single layer, ensuring they don’t overcrowd the pan. Cook for about 2-3 minutes on each side until they turn pink and crispy. Remove from heat and toss with a squeeze of lemon juice for brightness.
- Assemble the Bowls: Spoon the creamy grits into individual serving bowls. Top generously with the crispy shrimp. Garnish with fresh green onions and additional cajun seasoning if desired.
Notes
For a little extra flair, consider a drizzle of hot sauce on top.
