Description

Delightful waffles made with ube, bringing a sweet, nutty flavor and vibrant color to your breakfast table.

Ingredients

Scale
  • 1 cup ube (fresh or powdered)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar (or brown sugar for richer flavor)
  • 2 large eggs (or flaxseed mixture for vegan option)
  • 1 cup milk (any type: almond, oat, dairy)
  • 1/4 cup melted butter (or oil)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the ube: If using fresh ube, peel and chop the yam, then boil until tender (about 20 minutes). Mash it well and set aside to cool.
  2. Whisk dry ingredients: In a mixing bowl, combine flour, baking powder, sugar, and a pinch of salt. Stir until well blended.
  3. Combine wet ingredients: In another bowl, whisk together the mashed ube, eggs, milk, melted butter (or oil), and vanilla extract until smooth.
  4. Blend mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid over-mixing to keep those waffles light and fluffy.
  5. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it if necessary. Pour an appropriate amount of batter onto the center of the iron and close the lid. Cook until golden brown and crispy, usually about 5-7 minutes.
  6. Serve immediately: Serve with your favorite toppings, and enjoy!

Notes

For best results, preheat the waffle iron thoroughly and avoid over-mixing the batter.
