- 2 large potatoes, chopped (Russet or Yukon Gold)
- 1 medium onion, finely chopped

- 2 carrots, chopped
- 2 cloves garlic, minced
- 4 cups beef broth (low-sodium)
- 1 cup heavy cream or milk
- Salt and pepper to taste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Fresh parsley for garnish
Instructions
- Prepare your ingredients by chopping potatoes, celery, and carrots into bite-sized pieces and mincing the garlic and onion.
- Brown the ground beef and onion together in a skillet over medium-high heat until the meat is fully cooked. Add garlic in the last minute.
- Combine the browned meat mixture in the slow cooker with the chopped vegetables and seasonings. Gently mix together.
- Pour in the beef broth until the ingredients are just covered.
- Cook on low for 6-8 hours or on high for 4-5 hours.
- Finish with heavy cream about 30 minutes before serving for a velvety texture.
- Taste and adjust seasonings before serving.
- Serve hot, garnished with fresh parsley or chives.
