Description

Ingredients

  • 1 lb Italian Sausage (or Ground Beef/Turkey)
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 8 oz Button Mushrooms, sliced
  • 28 oz Crushed Tomatoes
  • 2 tbsp Tomato Paste
  • 4 cups Beef or Vegetable Broth
  • 15 oz Ricotta Cheese
  • 2 cups Mozzarella Cheese, shredded
  • 1/4 cup Fresh Basil, chopped
  • 2 tsp Italian Seasoning
  • Salt and Pepper to taste

Instructions

  1. Sauté the onions and garlic in olive oil until softened and fragrant.
  2. Brown the Italian sausage in the skillet until cooked through.
  3. Combine the sautéed mixture with mushrooms, crushed tomatoes, tomato paste, broth, and seasonings in the crockpot.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Add the ricotta and mozzarella cheese in the last 30 minutes of cooking.
  6. Serve hot, garnished with fresh basil and Parmesan if desired.

Notes

For a vegetarian option, replace the meat with lentils or chopped zucchini. Avoid overcooking the cheese to keep it creamy.
