- 1 lb Italian Sausage (or Ground Beef/Turkey)
- 1 Onion, diced
- 3 cloves Garlic, minced
- 8 oz Button Mushrooms, sliced
- 28 oz Crushed Tomatoes
- 2 tbsp Tomato Paste
- 4 cups Beef or Vegetable Broth
- 15 oz Ricotta Cheese
- 2 cups Mozzarella Cheese, shredded
- 1/4 cup Fresh Basil, chopped
- 2 tsp Italian Seasoning
- Salt and Pepper to taste
Instructions
- Sauté the onions and garlic in olive oil until softened and fragrant.
- Brown the Italian sausage in the skillet until cooked through.
- Combine the sautéed mixture with mushrooms, crushed tomatoes, tomato paste, broth, and seasonings in the crockpot.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Add the ricotta and mozzarella cheese in the last 30 minutes of cooking.
- Serve hot, garnished with fresh basil and Parmesan if desired.
Notes
For a vegetarian option, replace the meat with lentils or chopped zucchini. Avoid overcooking the cheese to keep it creamy.
