Description
A comforting and savory dish featuring tender chicken simmered in rich gravy, perfect for family dinners.
Ingredients
Scale
- 1 lb boneless, skinless chicken breasts or thighs
- 1 can cream of chicken soup (or homemade gravy)
- 1 cup chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup sautéed onions
- 2 cloves garlic, minced
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 tbsp cornstarch or flour
Instructions
- Prep your ingredients: Start by chopping your veggies and seasoning the chicken with salt, pepper, and your preferred herbs.
- Sauté for extra flavor: In a skillet, briefly sauté onions and garlic to release their flavors before adding them to the crockpot.
- Layer everything in the crockpot: Place the chicken at the bottom and layer the sautéed vegetables on top, followed by your cream of chicken soup. Pour in chicken broth until everything is nicely submerged.
- Set it and forget it: Cook on low for 6-8 hours or high for 3-4 hours.
- Thicken the gravy: Mix cornstarch with a little water to create a slurry and stir it into the crockpot during the last 30 minutes of cooking.
- Serve it up: Gently shred the chicken in the pot and stir to combine everything. Ladle the chicken and gravy over rice, mashed potatoes, or noodles.
Notes
For a creamy twist, try adding sour cream or cream cheese to your gravy. You can also use vegetable broth for a lighter base.
