- 2 cups pitted Medjool dates, chopped
- 1 cup walnuts, chopped
- 2 cups all-purpose flour (or whole wheat)
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar (or coconut/maple sugar)
- 3 large eggs
- 2 tsp baking powder
- 1 tsp cinnamon (or nutmeg)
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a cake pan with parchment paper.
- Chop the pitted dates and optionally soak them in warm water for 10 minutes.
- In a bowl, combine flour, baking powder, salt, and spices; whisk to mix.
- In another bowl, cream the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, incorporating each fully.
- Gradually mix the dry ingredients into the butter mixture until just combined.
- Fold in the chopped dates and walnuts until evenly mixed.
- Transfer to the prepared cake pan and spread evenly.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Optionally dust with powdered sugar before serving.
Notes
For a gluten-free option, substitute with almond flour. You can also use applesauce as an egg substitute.
