Description

A delightful dessert that combines the rich sweetness of dates with crunchy walnuts, perfect for any occasion.


Ingredients

  • 2 cups pitted Medjool dates, chopped
  • 1 cup walnuts, chopped
  • 2 cups all-purpose flour (or whole wheat)
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar (or coconut/maple sugar)
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon (or nutmeg)
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a cake pan with parchment paper.
  2. Chop the pitted dates and optionally soak them in warm water for 10 minutes.
  3. In a bowl, combine flour, baking powder, salt, and spices; whisk to mix.
  4. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, incorporating each fully.
  6. Gradually mix the dry ingredients into the butter mixture until just combined.
  7. Fold in the chopped dates and walnuts until evenly mixed.
  8. Transfer to the prepared cake pan and spread evenly.
  9. Bake for 30-35 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack. Optionally dust with powdered sugar before serving.

Notes

For a gluten-free option, substitute with almond flour. You can also use applesauce as an egg substitute.
