Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup toffee bits
  • 1 cup dark chocolate chips
  • Fleur de sel or flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each, and stir in the vanilla extract.
  4. Whisk together flour and baking soda in another bowl, then gradually blend this into the wet ingredients until just combined.
  5. Fold in the toffee bits and dark chocolate chips until evenly distributed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, leaving space in between each.
  7. Sprinkle a tiny pinch of flaky sea salt over each dollop.
  8. Bake for 10-12 minutes or until edges are golden, allowing the centers to remain slightly underbaked.
  9. Cool cookies on baking sheets for a few minutes before transferring to wire racks.

Notes

Chill the dough for 30 minutes before baking for thicker cookies, and rotate baking sheets halfway through for even baking.
