- 8 oz dark chocolate, chopped
- 2 tsp coconut oil
Instructions
- Prepare the Gingerbread Base: Start by crumbling the gingerbread cookies into fine crumbs.
- Mix in Cream Cheese and Spices: In a large bowl, combine the cookie crumbs with softened cream cheese, ground ginger, cinnamon, nutmeg, and cloves. Mix until well blended.
- Chill the Mixture: Wrap the mixture in plastic wrap and refrigerate for about 30 minutes.
- Form the Truffles: Scoop out small portions of the mixture and roll them into balls.
- Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate and coconut oil together, stirring every 30 seconds.
- Coat Each Truffle: Use a fork to dip each truffle into the melted chocolate, allowing the excess to drip back into the bowl.
- Chill Again: Pop the truffles back in the fridge for at least 30 minutes to set the chocolate.
- Serve and Enjoy: Once the chocolate has hardened, they’re ready to serve!
