Ingredients

  • 8 ounces cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 teaspoon cinnamon
  • A pinch of nutmeg
  • 1 tablespoon lemon juice
  • Zest of half a lemon
  • 1/4 cup brown sugar
  • 1 tablespoon melted butter
  • Extra cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the apples and slice off the tops.
  3. Scoop out the core and some flesh to create a bowl for the filling.
  4. Beat the cream cheese in a bowl until smooth.
  5. Add in the sugar, vanilla, lemon juice, and zest; mix until creamy.
  6. Incorporate the egg and blend smoothly.
  7. Fold in the cinnamon and nutmeg.
  8. Spoon the filling into each apple, leaving space at the top.
  9. Mix brown sugar, melted butter, and cinnamon; sprinkle over filled apples.
  10. Bake covered for 20-25 minutes, then uncover and bake for an additional 15-20 minutes until tender.
  11. Serve warm with whipped cream or ice cream.
