- 1 cup cornmeal
- 1 cup milk (whole or almond)
- 2 large eggs
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup corn kernels (canned or frozen)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- Fresh herbs (cilantro or scallions), for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and bell pepper until soft, about 5-7 minutes.
- In a large mixing bowl, combine cornmeal, milk, eggs, and half of the cheese, then mix until blended.
- Gently fold in the sautéed vegetables and corn kernels.
- Pour the mixture into a greased 9×9-inch baking dish and spread evenly.
- Top with the remaining cheese and a sprinkle of black pepper.
- Bake for about 35-40 minutes until the edges are golden brown and the center is set.
- Let it cool for 10 minutes before slicing and serving.
Notes
For a lighter option, you can control the amount of cheese and fat. This casserole can also be made with substitute vegetables or proteins.
