  • 2 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup corn kernels (canned or frozen)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh herbs (cilantro or scallions), for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and bell pepper until soft, about 5-7 minutes.
  3. In a large mixing bowl, combine cornmeal, milk, eggs, and half of the cheese, then mix until blended.
  4. Gently fold in the sautéed vegetables and corn kernels.
  5. Pour the mixture into a greased 9×9-inch baking dish and spread evenly.
  6. Top with the remaining cheese and a sprinkle of black pepper.
  7. Bake for about 35-40 minutes until the edges are golden brown and the center is set.
  8. Let it cool for 10 minutes before slicing and serving.
