- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- Fresh herbs (basil and parsley)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Prep the ingredients: Begin by finely chopping the onion and mincing the garlic. Measure out the breadcrumbs and cheese, and have a mixing bowl ready.
- Mix the meatball mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, fresh herbs, salt, and pepper. Mix with your hands until everything is just combined.
- Form the meatballs: Take about a tablespoon of the mixture and roll it gently between your palms to shape them into meatballs.
- Heat the skillet: In a large skillet, heat a couple of tablespoons of olive oil over medium heat.
- Cook the meatballs: Once the oil is shimmering, gently place the meatballs in the skillet without overcrowding. Cook for about 4-5 minutes on each side until they develop a nice golden crust.
- Add sauce (optional): If desired, add your favorite marinara sauce to the skillet and let the meatballs simmer for a few minutes.
- Serve and enjoy: Once cooked through, serve hot with pasta or on their own.

For variations, try using ground turkey or lean beef. Substitute fresh herbs based on availability.
