Instructions
- Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add your rotini and cook according to package instructions until al dente. Don’t forget to save a cup of pasta water for later!
- Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Once shimmering, add minced garlic and sauté for about a minute, mindful to not let it brown.
- Add Mushrooms: Toss in the sliced mushrooms, allowing them to brown slightly and release their umami goodness. This usually takes about 5-7 minutes.
- Incorporate Veggies: Next, add your chosen vegetables. Stir and sauté until they’re tender, usually around 3-5 minutes.
- Combine Pasta and Sauce: Drain the pasta, then add it directly to the skillet with the sautéed vegetables. Pour in a splash of reserved pasta water and mix everything together, letting the sauce cling to the rotini.
- Season and Enrich: Squeeze fresh lemon juice over the dish, season with salt and pepper to taste, and toss in fresh herbs. Top with a generous helping of grated Parmesan cheese.
- Serve: Plate your pasta while it’s hot, adding an extra sprinkle of cheese and herbs as a final touch.
Notes
Reserve some pasta water to help emulsify the sauce. For added flavor, ensure vegetables and oil are at room temperature before cooking.
