- 1 cup pumpkin puree
- 1 cup feta cheese
- 1/2 cup cream cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh herbs (thyme or rosemary)
- 2 tablespoons pumpkin seeds (for garnish)
- 1 tablespoon lemon juice
Instructions
- Prepare your ingredients: Gather all of your ingredients and preheat your oven to 350°F (175°C) if you’re roasting fresh pumpkin.
- Roast the pumpkin (if using fresh): Cut your fresh pumpkin in half, scoop out seeds, and slice into wedges. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 30-40 minutes, or until tender. Let it cool before scooping out the flesh.
- Blend the base: In your food processor, combine cooked pumpkin, feta cheese, cream cheese, minced garlic, and lemon juice. Blend until smooth and creamy.
- Add spice and herb: While the processor is running, drizzle in olive oil. Then add your fresh herbs and blend again until combined. Taste and adjust seasoning with salt and pepper.
- Serve it up: Transfer the dip to your favorite serving bowl. For a gorgeous touch, sprinkle toasted pumpkin seeds on top and drizzle with additional olive oil.
- Chill and enjoy: Let it chill for at least an hour to let the flavors meld. Serve with crusty bread, crackers, or vegetables.
Notes
For a silkier texture, add a splash of milk or sour cream. Fresh herbs enhance the flavor remarkably.
