Instructions

  1. Prepare your ingredients: Gather all of your ingredients and preheat your oven to 350°F (175°C) if you’re roasting fresh pumpkin.
  2. Roast the pumpkin (if using fresh): Cut your fresh pumpkin in half, scoop out seeds, and slice into wedges. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 30-40 minutes, or until tender. Let it cool before scooping out the flesh.
  3. Blend the base: In your food processor, combine cooked pumpkin, feta cheese, cream cheese, minced garlic, and lemon juice. Blend until smooth and creamy.
  4. Add spice and herb: While the processor is running, drizzle in olive oil. Then add your fresh herbs and blend again until combined. Taste and adjust seasoning with salt and pepper.
