- 1 cup shredded cheese (cheddar or pepper jack)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onions, bell peppers, and garlic. Sauté until fragrant, about 5 minutes.
- Brown the meat: Add ground beef, breaking it up. Cook until browned, about 6-8 minutes. Season with salt and pepper.
- Stir in the taco seasoning: Sprinkle in the taco seasoning. Mix well.
- Add the broth and beans: Pour in broth and add drained beans and corn. Bring to a simmer for about 10 minutes.
- Introduce the creaminess: Lower the heat, and stir in cream cheese or sour cream until melted.
- Adjust seasoning: Taste and add more spices if needed.
- Serve warm: Ladle into bowls and top with shredded cheese and cilantro. Squeeze lime over the top.
