Ingredients

  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, cubed
  • 2 cups tomatoes (canned or fresh)
  • 4 cups beef broth
  • 2 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep the ingredients: Cut the beef into bite-sized cubes, mince the garlic, and chop the onions, carrots, and potatoes.
  2. Sear the beef: In a large Dutch oven, heat olive oil over medium-high heat. Add the beef in batches, browning on all sides.
  3. Sauté aromatics: Remove the beef from the pot, then add onions and garlic, sautéing until translucent.
  4. Deglaze: Add a splash of red wine or broth to lift the fond from the bottom of the pot.
  5. Combine ingredients: Return the beef to the pot along with carrots, potatoes, tomatoes, and herbs. Pour in enough beef broth to cover everything.
  6. Simmer: Bring to a gentle boil, reduce heat, and simmer uncovered for about 120 minutes, stirring occasionally.
  7. Serve: Once the beef is tender and veggies are soft, remove bay leaves and serve hot, garnished with parsley if desired.
