Ingredients

- 1 can chickpeas (or kidney beans or cannellini beans)
- 1/2 cup Kalamata olives (sliced)
- 1/2 small red onion (finely diced)
- 1/4 cup fresh basil (chopped)
- 1/4 cup fresh parsley (chopped)
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper (to taste)
Instructions
- Gather your ingredients on the kitchen counter.
- Prep the beans by rinsing canned beans under cold water.
- Chop the onion and olives, and roughly chop the fresh herbs.
- Mix the dressing in a bowl by whisking olive oil, lemon juice, salt, and pepper.
- Combine the salad in a large bowl with beans, onions, olives, and herbs.
