Description

A comforting and hearty Tuscan soup filled with earthy mushrooms, garlic, and fresh herbs that brings families together.


Ingredients

  • 8 oz mixed mushrooms (cremini and shiitake)
  • 4 cloves fresh garlic, minced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, to taste (optional)

Instructions

  1. Start by heating olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté for about 5 minutes.
  2. Toss in the sliced mushrooms and minced garlic, continuing to sauté until the mushrooms are golden, about 5-7 minutes.
  3. Add the diced tomatoes (with their juices) and broth to the pot. Stir to combine and bring to a gentle simmer.
  4. Season the soup with salt, pepper, and red pepper flakes if desired. Let it simmer for 20-25 minutes.
  5. Mix in the chopped basil and parsley just before serving, adjusting seasoning to taste.
  6. Ladle the soup into bowls and enjoy with crusty bread or cooked pasta.

Notes

Feel free to get creative with vegetables! You can use kale, spinach, or other seasonal veggies. Tofu can replace mushrooms for a protein boost.
