- 3/4 cup unsweetened cocoa powder
- 8 oz dark chocolate (70% cacao)
- 1 cup freshly brewed espresso
- 4 large eggs
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Allow it to cool slightly.
- Mix the dry ingredients: whisk together the flour, cocoa powder, baking powder, and baking soda.
- Combine the wet ingredients: beat the butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
- Incorporate the cooled espresso and melted chocolate into the wet mixture.
- Combine wet and dry mixtures, mixing until just combined.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with chocolate ganache or buttercream once cooled.
Notes
Use room temperature ingredients for better mixing. Be careful not to overmix the batter to keep the cake light and fluffy.
