Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 8 oz dark chocolate (70% cacao)
  • 1 cup freshly brewed espresso
  • 4 large eggs
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Allow it to cool slightly.
  3. Mix the dry ingredients: whisk together the flour, cocoa powder, baking powder, and baking soda.
  4. Combine the wet ingredients: beat the butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
  5. Incorporate the cooled espresso and melted chocolate into the wet mixture.
  6. Combine wet and dry mixtures, mixing until just combined.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Frost with chocolate ganache or buttercream once cooled.

Notes

Use room temperature ingredients for better mixing. Be careful not to overmix the batter to keep the cake light and fluffy.
