Ingredients
Scale
- 2 cups Potatoes (Russet or Yukon Gold), peeled and diced
- 1 cup Cheese (Cheddar, Gruyère, or Swiss), shredded
- 2 tablespoons Butter or Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1/4 cup Fresh Herbs (Chives, Parsley, or Thyme), chopped

Instructions
- Prepare the potatoes: Peel and dice them into small, even cubes. Rinse under cold water.
- Sauté the aromatics: Melt butter in a skillet, add onions, and cook until translucent. Add garlic and sauté.
- Add the potatoes: Toss them in the skillet and season with salt and pepper. Cook undisturbed to allow caramelization.
- Incorporate cheese and herbs: Stir in cheese once potatoes are tender, along with fresh herbs.
- Play with texture: Let the hash sit in the skillet for extra crispiness before serving.
- Finish it off: Garnish with more herbs and serve with eggs or salad.
