Description

Ingredients

  • 4 cloves garlic, thinly sliced
  • 1/4 cup unsalted butter
  • 4 cups chicken or vegetable broth
  • 1 cup mushrooms (shiitake, cremini, or button)
  • 2 tablespoons soy sauce
  • Fresh herbs (chives, scallions, or cilantro) for garnish

Instructions

  1. Cook the noodles: Bring a pot of salted water to a boil. Add ramen noodles and cook according to package instructions (3-4 minutes for fresh noodles). Save a cup of the cooking water.
  2. Sauté the garlic: In a skillet, melt butter over medium heat. Add sliced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the mushrooms: Toss in your choice of mushrooms and sauté until tender and golden brown (5-7 minutes).
  4. Combine: Drain the cooked noodles and add them to the skillet with the garlic and mushrooms. Toss with soy sauce and a splash of reserved noodle water.
  5. Finish with herbs: Remove from heat, sprinkle fresh herbs over the top, stir to combine, and taste for seasoning.
  6. Serve: Enjoy hot, garnished with more herbs and a drizzle of sesame oil if desired.

Notes

For a vegetarian option, add more vegetables or tofu. Adjust seasonings to taste.
