- 1 lb shrimp (peeled and deveined)
- 4 tbsp unsalted butter
- 4 cloves garlic (minced)
- 1 cup long-grain white rice or basmati
- 1 cup sautéed mushrooms
- 1/2 cup green onions (chopped)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley or cilantro (for garnish)
- 2 cups chicken or seafood broth
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the rice according to package instructions using water or broth.
- In a skillet, melt the butter over medium heat, add garlic, and sauté until fragrant. Add shrimp, season with salt and pepper, and cook until pink.
- In a large bowl, combine the cooked rice, sautéed shrimp, and vegetables, mixing gently.
- Transfer the mixture to a greased baking dish, cover with foil, and bake for 20 minutes.
- Remove the foil, sprinkle fresh herbs, and bake for an additional 10 minutes until golden.
- Let it rest for a few minutes before serving while garnished with parsley or green onions.
Notes
For a lighter option, use olive oil instead of butter or gluten-free rice. It can also be made vegetarian by substituting shrimp with tofu or chickpeas.
