  • 1 cup sautéed mushrooms
  • 1/2 cup green onions (chopped)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley or cilantro (for garnish)
  • 2 cups chicken or seafood broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to package instructions using water or broth.
  3. In a skillet, melt the butter over medium heat, add garlic, and sauté until fragrant. Add shrimp, season with salt and pepper, and cook until pink.
  4. In a large bowl, combine the cooked rice, sautéed shrimp, and vegetables, mixing gently.
  5. Transfer the mixture to a greased baking dish, cover with foil, and bake for 20 minutes.
  6. Remove the foil, sprinkle fresh herbs, and bake for an additional 10 minutes until golden.
  7. Let it rest for a few minutes before serving while garnished with parsley or green onions.

Notes

For a lighter option, use olive oil instead of butter or gluten-free rice. It can also be made vegetarian by substituting shrimp with tofu or chickpeas.
