Description

Deliciously crispy and creamy Greek Smashed Potatoes topped with crumbled feta, garlic, and fresh herbs, perfect for any gathering.


Ingredients

  • 2 lbs Yukon Gold or russet potatoes
  • 1 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Boil the potatoes in cold, salted water until fork-tender, about 15-20 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Prepare the garlic and herbs by finely chopping them.
  4. Smash the potatoes gently on a baking sheet lined with parchment paper to about ½ inch thick.
  5. Season the smashed potatoes with olive oil, garlic, lemon zest, salt, and pepper; top with feta and fresh herbs.
  6. Bake for 25-30 minutes or until golden brown and crispy.
  7. Serve warm, drizzled with more olive oil and sprinkled with fresh herbs.

Notes

Make sure not to overboil the potatoes to retain their texture. Fresh herbs are key for the best flavor!
