Ingredients

- 2 cups Hatch green chiles, roasted and chopped
- 1 lb protein (shredded chicken, ground beef, or black beans)
- 4 large flour tortillas
- 1 cup Monterey Jack cheese, shredded
- 1 cup sharp cheddar cheese, shredded
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
- Olive oil for cooking
Instructions
- Prepare the Hatch Chiles: Roast until skins blister, then peel and chop.
- Cook the Protein: Heat olive oil, sauté onions and garlic until soft, then add protein and brown.
- Mix in the Chiles and Spices: Add chiles, cumin, paprika, and salt. Cook for another 2-3 minutes.
- Assemble the Burritos: Place filling onto a tortilla, sprinkle with cheese, and roll up tightly.
- Cook Again: Sear burritos in the skillet until golden brown on both sides.
- Serve and Enjoy: Slice in half and serve with your favorite toppings.
Notes
Roast chiles for deeper flavor. Don’t overstuff burritos for easier rolling.
