Ingredients

  • 2 cups Hatch green chiles, roasted and chopped
  • 1 lb protein (shredded chicken, ground beef, or black beans)
  • 4 large flour tortillas
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Olive oil for cooking

Instructions

  1. Prepare the Hatch Chiles: Roast until skins blister, then peel and chop.
  2. Cook the Protein: Heat olive oil, sauté onions and garlic until soft, then add protein and brown.
  3. Mix in the Chiles and Spices: Add chiles, cumin, paprika, and salt. Cook for another 2-3 minutes.
  4. Assemble the Burritos: Place filling onto a tortilla, sprinkle with cheese, and roll up tightly.
  5. Cook Again: Sear burritos in the skillet until golden brown on both sides.
  6. Serve and Enjoy: Slice in half and serve with your favorite toppings.

Notes

Roast chiles for deeper flavor. Don’t overstuff burritos for easier rolling.
