- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract (optional)
- Green food coloring
- For the frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, at room temperature
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and light in color.
- Add the egg, vanilla extract, and almond extract, mixing until well combined.
- Gradually add the dry mixture to the wet mixture until just combined.
- Add green food coloring until you reach your desired color.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let them cool for 5 minutes before transferring them to a wire rack.
- For the frosting, beat together cream cheese and butter, then gradually add powdered sugar and vanilla until fluffy.
- Once cookies are cooled, frost each cookie generously and decorate as desired.
Notes
For thicker cookies, chill the dough before baking. Store in an airtight container for up to 5 days or freeze for later.
