  • Green food coloring
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, at room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and light in color.
  4. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  5. Gradually add the dry mixture to the wet mixture until just combined.
  6. Add green food coloring until you reach your desired color.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Let them cool for 5 minutes before transferring them to a wire rack.
  9. For the frosting, beat together cream cheese and butter, then gradually add powdered sugar and vanilla until fluffy.
  10. Once cookies are cooled, frost each cookie generously and decorate as desired.

Notes

For thicker cookies, chill the dough before baking. Store in an airtight container for up to 5 days or freeze for later.
