Description

A comforting and hearty stew made with tender beef and rich Guinness beer, perfect for chilly evenings.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 bottle (12 oz) Guinness stout
  • 2 onions, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 potatoes, peeled and diced
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • Olive oil, for browning

Instructions

  1. Brown the beef: Start by heating a large, heavy pot over medium-high heat. Add a splash of oil and let it shimmer before adding the beef. Sear the meat on all sides until it’s beautifully browned.
  2. Sauté the vegetables: Once the beef is done, remove it from the pot and add the diced onions. Sauté until they’re soft, then add the garlic and cook until fragrant. Toss in the carrots.
  3. Deglaze the pot: Pour in the Guinness, scraping up the bits stuck to the bottom of the pot.
  4. Add everything back to the pot: Place the browned beef back in, along with the potatoes, broth, and herbs. Stir to combine.
  5. Simmer low and slow: Bring to a simmer, cover, and let it cook on low heat for at least 120 minutes.
  6. Season to taste: Before serving, taste and adjust seasoning as necessary.
  7. Serve with love: Ladle the stew into bowls and enjoy with crusty bread or mashed potatoes.
