Ingredients

- Thin rice noodles

- 1 lime, juiced
- Optional protein (shredded chicken or tofu)
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat.
- Add the minced garlic and finely grated ginger to the pot and sauté for 1-2 minutes until fragrant.
- Pour in your choice of broth and bring to a gentle simmer.
- Add your fresh vegetables and let them soften.
- Stir in the rice noodles and cook for about 4-5 minutes.
- Before serving, add chopped fresh herbs and lime juice.
- Serve immediately, garnished with more herbs, lime wedges, or protein if desired.
