Ingredients

- Mushrooms, shiitake or button, sliced
- Leafy Greens, spinach or bok choy
- Fresh Herbs, cilantro or green onions for garnish

- Lime Juice, to taste
Instructions
- Sauté the garlic and ginger in a large stockpot with oil over medium heat until fragrant.
- Add the broth and bring to a gentle simmer, then stir in mushrooms and other vegetables.
- Cook the rice noodles separately according to package instructions.
- Combine the cooked noodles into the broth and stir gently.
- Finish with soy sauce and lime juice, adjusting to taste; top with fresh herbs.
