Instructions

- Sear the beef (optional): Brown beef tips in a skillet over medium-high heat.
- Layer in the slow cooker: Add beef tips, chopped onions, minced garlic, and mushrooms.
- Mix the gravy ingredients: Combine beef broth, Worcestershire sauce, salt, and pepper in a bowl.
- Pour this mixture over the beef and vegetables, tossing gently to combine.
- Add thyme and bay leaves for fragrance.
- Cook on low: Cover and let it cook for 6 to 8 hours.
- Thicken the gravy (optional): Add a cornstarch slurry in the last half hour if desired.
