Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 stalks celery, chopped
  • 4 cups beef broth
  • 1 cup red wine
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sear the meat: Season beef with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat, and sear the beef cubes until browned.
  2. Remove the beef and set aside. In the same pot, lower the heat and add onions, garlic, and celery. Sauté until onions are translucent.
  3. Add the carrots and potatoes, cooking for about 5 minutes.
  4. Deglaze the pot with red wine, scraping up the browned bits.
  5. Combine the beef back in the pot with broth and herbs. Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Check seasoning and adjust as needed. Garnish with fresh parsley before serving.
  7. Serve hot with crusty bread or rice.
