- 2 lbs beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 stalks celery, chopped
- 4 cups beef broth
- 1 cup red wine
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sear the meat: Season beef with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat, and sear the beef cubes until browned.
- Remove the beef and set aside. In the same pot, lower the heat and add onions, garlic, and celery. Sauté until onions are translucent.
- Add the carrots and potatoes, cooking for about 5 minutes.
- Deglaze the pot with red wine, scraping up the browned bits.
- Combine the beef back in the pot with broth and herbs. Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
- Check seasoning and adjust as needed. Garnish with fresh parsley before serving.
- Serve hot with crusty bread or rice.
