- 4 bone-in, skin-on chicken thighs or breasts
- 2 cups mixed button and cremini mushrooms, sliced
- 2 cups Yukon Gold potatoes, diced
- 1 cup heavy cream
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the chicken and pat it dry with paper towels.
- Combine olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl, then rub the mixture over the chicken.
- Heat a large oven-safe skillet over medium-high heat and sear the chicken skin-side down for about 5 minutes.
- Flip the chicken over.
- Add sliced mushrooms and diced potatoes around the chicken and cook for an additional 5 minutes.
- Pour in the heavy cream, bringing it to a gentle simmer.
- Transfer the skillet to the oven and roast for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let it rest for 5-10 minutes before serving.
Notes
Serve with steamed greens or a salad. Pairs well with white wine.
