Ingredients

  • 4 bone-in, skin-on chicken thighs or breasts
  • 2 cups mixed button and cremini mushrooms, sliced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup heavy cream
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. Combine olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl, then rub the mixture over the chicken.
  4. Heat a large oven-safe skillet over medium-high heat and sear the chicken skin-side down for about 5 minutes.
  5. Flip the chicken over.
  6. Add sliced mushrooms and diced potatoes around the chicken and cook for an additional 5 minutes.
  7. Pour in the heavy cream, bringing it to a gentle simmer.
  8. Transfer the skillet to the oven and roast for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  9. Remove the skillet from the oven and let it rest for 5-10 minutes before serving.
