Instructions
- Prepare the filling: In a large bowl, combine softened cream cheese, sifted powdered sugar, and pure peppermint extract. Beat together until creamy.
- Shape the patties: Dust your hands with powdered sugar and form the peppermint mixture into flat discs, about 1/2 inch thick.
- Chill the filling: Place the shaped disks in the freezer for 20-30 minutes.
- Melt the chocolate: Melt dark chocolate and butter over a double boiler or in the microwave until smooth.
- Coat the patties: Dip each chilled patty into the melted chocolate and place back on a parchment-lined baking sheet.
- Chill again: Refrigerate the coated patties for an additional 30 minutes to set the chocolate.
