Ingredients

  • 1 cup long-grain rice (jasmine or basmati)
  • 2 cloves garlic, minced
  • Fresh herbs (basil, parsley, or scallions)
  • Vegetables (asparagus or green beans)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the glaze by melting the butter in a small saucepan over medium heat, then stirring in honey and minced garlic, and setting aside.
  3. Place the salmon fillets on a parchment-lined baking sheet and brush with the honey butter glaze.
  4. Roast the salmon for 12-15 minutes until it flakes easily, basting with more glaze halfway through.
  5. Cook the rice per package instructions, adding broth for flavor if desired.
  6. Sauté vegetables in olive oil until vibrant and tender.
  7. Assemble the bowl with rice, top with salmon and vegetables, drizzle with remaining sauce, garnish with herbs, and enjoy!

Notes

Use a meat thermometer for the salmon to reach 145°F (63°C). Let it rest for a minute before serving.
