Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the softened butter and sugars until light and fluffy, then add the eggs one at a time, mixing well after each addition.
  3. Sift together the cocoa powder, flour, baking powder, and salt in a separate bowl.
  4. Combine the dry mixture with the wet ingredients, mixing just until combined.
  5. Fold in the mini marshmallows until evenly distributed.
  6. Scoop dough onto the prepared baking sheet, leaving space for spreading, and bake for 10–12 minutes.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For chewier cookies, chill the dough before baking for 30 minutes. Store in an airtight container for up to a week.
