- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup unsweetened cocoa powder
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the softened butter and sugars until light and fluffy, then add the eggs one at a time, mixing well after each addition.
- Sift together the cocoa powder, flour, baking powder, and salt in a separate bowl.
- Combine the dry mixture with the wet ingredients, mixing just until combined.
- Fold in the mini marshmallows until evenly distributed.
- Scoop dough onto the prepared baking sheet, leaving space for spreading, and bake for 10–12 minutes.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, chill the dough before baking for 30 minutes. Store in an airtight container for up to a week.
