Ingredients

  • 1 whole chicken (45 pounds)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Fresh rosemary or thyme, to taste

Instructions

  1. Rinse the chicken under cold water and pat it dry with paper towels. Season it generously with salt, pepper, and any spices you prefer.
  2. Set your Instant Pot to the sauté function and add olive oil. Sauté onions and garlic until fragrant, then add diced carrots.
  3. Carefully place the seasoned chicken into the pot and brown on all sides for about 4-5 minutes.
  4. Pour in the chicken broth and add fresh herbs.
  5. Close the lid and ensure the pressure valve is sealed. Set to high pressure for about 6 minutes per pound. For a 4-pound chicken, cook for roughly 24 minutes.
  6. Let the pressure release naturally for 10-15 minutes before switching the valve to release any remaining steam.
  7. Carefully remove the chicken and let it rest for at least 10 minutes before carving.
  8. If desired, broil the chicken in the oven for 3-5 minutes for crispy skin before serving.

Notes

Serve with creamy mashed potatoes or a fresh green salad for a complete meal. Use leftover chicken in soups or tacos for quick meals.
