- 1 whole chicken (4–5 pounds)
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Fresh rosemary or thyme, to taste
Instructions
- Rinse the chicken under cold water and pat it dry with paper towels. Season it generously with salt, pepper, and any spices you prefer.
- Set your Instant Pot to the sauté function and add olive oil. Sauté onions and garlic until fragrant, then add diced carrots.
- Carefully place the seasoned chicken into the pot and brown on all sides for about 4-5 minutes.
- Pour in the chicken broth and add fresh herbs.
- Close the lid and ensure the pressure valve is sealed. Set to high pressure for about 6 minutes per pound. For a 4-pound chicken, cook for roughly 24 minutes.
- Let the pressure release naturally for 10-15 minutes before switching the valve to release any remaining steam.
- Carefully remove the chicken and let it rest for at least 10 minutes before carving.
- If desired, broil the chicken in the oven for 3-5 minutes for crispy skin before serving.
Notes
Serve with creamy mashed potatoes or a fresh green salad for a complete meal. Use leftover chicken in soups or tacos for quick meals.
