- 16 oz cream cheese, room temperature
- ¾ cup granulated sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 2 cups blueberries
- 1 cup crushed graham crackers
- ¼ cup melted unsalted butter
- 2 tablespoons sugar (for crust)
- ½ cup all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar
- ¼ cup melted butter (for crumble)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham crackers, melted butter, and sugar in a bowl. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes and allow to cool.
- Beat cream cheese until smooth. Add sugar and vanilla, mixing well.
- Incorporate eggs one at a time until blended.
- Fold in blueberries gently and pour the mixture over the cooled crust.
- Bake for 45 to 50 minutes, until center is set but jiggly.
- Turn off the oven and leave cheesecake inside with the door ajar for an hour to cool.
- Combine flour, oats, brown sugar, and melted butter in a bowl for the crumble topping.
- Sprinkle crumble over the cheesecake and return to the oven for an additional 15 minutes.
- Cool completely and refrigerate for at least 4 hours or overnight before serving.
Notes
For a gluten-free version, replace all-purpose flour with almond flour or a gluten-free blend. Enjoy with whipped cream or a drizzle of chocolate sauce!
