Ingredients

  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 2 cups blueberries
  • 1 cup crushed graham crackers
  • ¼ cup melted unsalted butter
  • 2 tablespoons sugar (for crust)
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ¼ cup melted butter (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham crackers, melted butter, and sugar in a bowl. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes and allow to cool.
  4. Beat cream cheese until smooth. Add sugar and vanilla, mixing well.
  5. Incorporate eggs one at a time until blended.
  6. Fold in blueberries gently and pour the mixture over the cooled crust.
  7. Bake for 45 to 50 minutes, until center is set but jiggly.
  8. Turn off the oven and leave cheesecake inside with the door ajar for an hour to cool.
  9. Combine flour, oats, brown sugar, and melted butter in a bowl for the crumble topping.
  10. Sprinkle crumble over the cheesecake and return to the oven for an additional 15 minutes.
  11. Cool completely and refrigerate for at least 4 hours or overnight before serving.

Notes

For a gluten-free version, replace all-purpose flour with almond flour or a gluten-free blend. Enjoy with whipped cream or a drizzle of chocolate sauce!
