  • 1 can whole kernel corn
  • 1 can cream-style corn
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/4 cup sugar
  • Optional: 1 cup shredded cheddar cheese
  • Optional: 1 cup chopped onions, sautéed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the Jiffy corn muffin mix, whole kernel corn, cream-style corn, sour cream, melted butter, eggs, and sugar in a large bowl. If using sautéed onions, add them now.
  3. Prepare a 9×13-inch baking dish by greasing it with butter or cooking spray.
  4. Pour the mixture into the prepared baking dish and scatter shredded cheese on top if desired.
  5. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let the casserole rest for 10 minutes before serving.
