- 1 box Jiffy Corn Muffin Mix
- 1 can whole kernel corn
- 1 can cream-style corn
- 1 cup sour cream
- 1/2 cup butter, melted
- 2 large eggs
- 1/4 cup sugar
- Optional: 1 cup shredded cheddar cheese
- Optional: 1 cup chopped onions, sautéed
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the Jiffy corn muffin mix, whole kernel corn, cream-style corn, sour cream, melted butter, eggs, and sugar in a large bowl. If using sautéed onions, add them now.
- Prepare a 9×13-inch baking dish by greasing it with butter or cooking spray.
- Pour the mixture into the prepared baking dish and scatter shredded cheese on top if desired.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the casserole rest for 10 minutes before serving.
Notes
Using room temperature ingredients will result in a smoother texture. Avoid over-mixing for a fluffier casserole.
